Choose Marshall Chamber Welcomes New Member El Tajin Mexican Restaurant
The Marshall Area Economic Development Alliance (MAEDA)/Choose Marshall held a New Chamber Member Presentation and Ribbon Cutting to welcome El Tajin an authentic Mexican restaurant to downtown Marshall.

Restaurant owners Emilio Vazquez and Jamie Witkowski opened El Tajin in July of 2021. After working for several restaurants earlier in his career, Emilio decided it was time to have his own space. He commented, “I felt it was in my blood, and something I needed to do.”
Customers will notice the freshness and the authentic taste of Mexico in El Tajin’s menu. Specializing in a wide variety of Mexican food, their offerings include enchiladas, burritos, taco salads, fajitas, nachos, quesadillas, tacos, and vegetarian offerings as well. The tamales and guacamole are made in-house, and all other entrees are prepared with fresh ingredients. Many of El Tajin’s recipes were passed down from Vazquez’ family members. Vazquez stated with a big smile, “My Grandmother’s hot salsa is a customer favorite, and all menu items are ‘Mom Approved’.” Plan to finish your meal with a churros or other traditional Mexican dessert fare.
When designing the restaurant decor, Vazquez wanted to convey a lively and festive look. He commented, “We wanted the brightly colored décor to make your dining experience feel authentic. We even designed and painted the murals on the walls and the dining tables ourselves with the help of one of our employees.” He added, “The large pyramid is the El Tajin pyramid located in Southern Mexico.“
Eventually, Vazquez would like to offer customers a margarita or other alcoholic drink and is currently looking into obtaining a liquor license for his restaurant. He would also like to add on-line ordering to their website.
